Sausage Soup - cooking recipe
Ingredients

2 lb. sweet Italian sausage
1 onion, chopped
2 bell peppers, chopped
4 c. beef broth
1 1/4 c. cooking sherry
1 Tbsp. parsley
1 Tbsp. basil
1 Tbsp. oregano
1 tsp. garlic, chopped
28 oz. can crushed tomato in puree
8 oz. pasta bows
salt and pepper
Preparation

Cut sausage in small pieces and saute in a large pot.
Add onions and peppers and saute.
Add broth and sherry.
Bring to a boil.
Add parsley, basil, oregano, garlic and tomatoes.
Cover and simmer for 1 hour.
If too thick, add a little water.
Add bows and cook until they are done, about 20 minutes.
Sprinkle each portion with Parmesan cheese.
