Carrot Nut Bread - cooking recipe
Ingredients

2 eggs
1 c. sugar
1 c. grated carrots
1 1/2 c. sifted flour
3/4 c. salad oil
1 Tbsp. baking powder
1 Tbsp. cinnamon
1/4 tsp. salt
1 c. walnuts
Preparation

Mix (do not beat), eggs, sugar and carrots.
Add oil slowly, otherwise oil settles to the top.
Add dry ingredients all at once; mix.
Mixture is heavy.
Add nuts.
Use 5 x 9-inch pan, line the bottom.
Bake at 350\u00b0 for 1 hour.
Test before removing from oven. Let bread cool; loosen edges, remove from pan, and wrap in foil while still warm.
Place in refrigerator to cool (makes it moist).
