Zesty Marinated Vegetables - cooking recipe

Ingredients
    4 medium carrots, scraped and diagonally sliced
    1 small head cauliflower, broken into flowerets
    2 small zucchini, sliced
    1/4 lb. fresh mushrooms, sliced
    1 c. water
    1/3 c. vinegar
    1 (0.6 oz.) pkg. Italian salad dressing mix
Preparation
    Combine first 4 ingredients in a large shallow dish.
    Combine water, vinegar and dressing mix in a jar; cover tightly and shake vigorously.
    Pour over vegetables, tossing lightly to coat.
    Cover and chill overnight.
    Yield:
    8 servings (about 33 calories per serving).
