Okra Puffs - cooking recipe

Ingredients
    2 c. cooked okra
    1 egg
    1 tsp. salt
    1 Tbsp. sugar
    1/2 tsp. baking powder
    1/2 c. flour
    pepper to taste
Preparation
    Okra may be fresh, frozen or canned.
    Boil in a small amount of water until tender.
    Drain.
    Chop, mash and beat with a fork or in a blender.
    Add egg, sugar, salt and pepper.
    Beat well.
    Sift flour and baking powder together.
    Add and beat.
    Drop by 1 teaspoon into deep, very hot fat.
    Brown, turn without pricking. Cook until very brown and crisp.
    Drain on paper towels.
    Serve hot.
    Serves 8 or more.
