Sweet Potato Boats - cooking recipe

Ingredients
    5 large sweet potatoes, baked
    1/3 c. brown sugar
    4 Tbsp. peanut butter
    12 c. peanuts, chopped
Preparation
    Let potatoes cool after baking; cut in half (lengthwise). Scoop out inside, saving the peelings.
    Mash potato, brown sugar and peanut butter together.
    Put back into peelings.
    Sprinkle with chopped peanuts.
    Put into oven at 450\u00b0 and brown slightly.
