New Orleans Squash - cooking recipe

Ingredients
    1 1/2 lb. yellow squash
    1/2 c. butter
    1/2 c. chopped onion
    1/4 c. bell pepper
    1/2 c. mayonnaise
    1/2 c. grated Cheddar cheese
    1 c. chopped water chestnuts
    1 egg
    1 Tbsp. sugar
    Ritz cracker crumbs
Preparation
    Cook sliced squash until fork-tender; drain. Saut onions and pepper in butter. Add all ingredients except crumbs. Pour into 1 1/2-quart greased casserole. Top with crumbs. Bake at 350\u00b0 for 30 minutes. Serves 6. Can freeze. Can do ahead.
