Chicken Cheese Vegetable Soup - cooking recipe
Ingredients

1 c. diced carrots
1 c. diced celery
1 c. diced onion
1 qt. chicken stock
1/3 lb. butter
1 1/2 c. flour
1 qt. milk
1 1/2 lb. American cheese (Velveeta)
1 c. diced, cooked chicken
salt and pepper to taste
Preparation

Simmer diced veggies in chicken stock until tender, but crisp. Melt butter in large pot.
Blend in flour.
Heat milk to boiling, but do not boil.
Slowly blend into flour mixture until smooth.
Add cheese.
Stir until melted.
Strain veggies from stock and add stock to cheese-milk.
Stir until smooth with wire whip.
Add veggies and cooked chicken.
Season to taste. Garnish with fresh parsley sprigs.
