Ingredients

1 qt. vanilla or chocolate ice cream
1 1/4 c. crushed crispy rice cereal (Rice Chex)
1/2 c. light brown sugar, firmly packed
1/2 c. Macadamia nuts or cashews, chopped
1/4 c. butter or margarine, melted
1/2 c. flaked coconut
fresh strawberries or other berries for garnish (optional)
Preparation

Remove ice cream from freezer to soften as you prepare the crunchy base for the dessert.
Combine the cereal, brown sugar, nuts, butter or margarine and coconut.
Mix and blend well.
Press half the crunchy mixture into the bottom of a 9-inch square cake pan.
Pat down firmly.
Spread ice cream evenly over the top. Sprinkle with remaining crunchy mixture to cover.
Cover airtight. Freeze until firm, about 1 hour.
When ready to serve, remove from freezer.
Cut into squares.
Top each square with a fresh strawberry, if desired.
