Eggplant-Cheese Casserole - cooking recipe
Ingredients

1 medium-sized eggplant
1 small stalk celery
1 small onion
1/2 tsp. salt
1/2 tsp. pepper
1 c. thick cream sauce
1 small can pimento
2 eggs
1 medium can cut mushrooms
1/2 c. chopped toasted almonds
1/2 lb. grated cheese
bread crumbs
Preparation

Cook eggplant, celery and onion with salt and pepper in a small amount of water.
Drain and mash.
Add cream sauce, raw eggs, mushrooms, almonds and grated cheese.
Pour in casserole dish and top with bread crumbs.
Bake at 350\u00b0 for 20 minutes or until well set.
This serves 12 people.
