Raspberry Cornmeal Muffins - cooking recipe
Ingredients

3/4 c. fresh raspberries
2 eggs, beaten
1 c. milk
1 tsp. vanilla
1 1/2 c. flour
3/4 c. sugar
3/4 c. cornmeal
1 Tbsp. baking powder
1/4 tsp. salt
4 Tbsp. butter, melted
1 tsp. grated orange peel
Preparation

Gently rinse berries; pat dry and set aside.
In a mixing bowl, combine eggs, milk and vanilla.
In a separate bowl, combine flour, sugar, cornmeal, baking powder, salt and grated orange peel.
Stir egg-milk mixture into the flour mixture, along with the melted butter.
(Stir just enough to blend ingredients; do not overmix.)
