Chicken Tortilla Casserole - cooking recipe
Ingredients

2 or 3 chicken breasts
2 Tbsp. oleo or butter
1 bell pepper
2 or 3 cloves garlic
2 (12 oz.) jars salsa
5 to 10 corn tortillas (depends on size)
grated cheese (Monterey Jack and others; I use 3 cheeses, Monterey Jack, Mozzarella and Cheddar)
Preparation

Cut chicken into cubes. Put in large skillet with butter. Cook a few minutes until chicken is white. Add chopped pepper and minced garlic. Heat 4 or 5 minutes until all is hot. Add salsa. Remove from fire. Tear tortillas in pieces. Layer with chicken mix and cheeses in baking dish. Bake 30 to 35 minutes at 350\u00b0. This freezes well.
