Chicken And Cashew Stir-Fry - cooking recipe

Ingredients
    1/2 c. water
    2 Tbsp. dry sherry
    2 Tbsp. soy sauce
    4 tsp. cornstarch
    1/2 tsp. minced garlic
    1/4 tsp. black pepper
    2 Tbsp. peanut oil
    3 c. cubed uncooked chicken
    1 1/2 c. sliced celery
    1 1/2 c. sliced onion (optional)
    1 1/2 c. fresh mushrooms
    1 1/3 c. cashews
Preparation
    Blend together water, dry sherry, soy sauce, cornstarch, garlic and pepper; set aside.
    Heat peanut oil in a wok or skillet over medium-high heat.
    Add chicken, celery and onion.
    Stir-fry 4 minutes, until chicken is cooked and celery and onion are tender. Add the mushrooms and cashews; stir-fry 1 minute.
    Mix in soy mixture; cook and stir until sauce is thickened.
    Serve immediately over a bed of cooked rice.
