Lime Pickles - cooking recipe

Ingredients
    7 or 8 lb. cucumbers (do not peel)
    2 c. lime
    2 gal. water
    2 qt. cider vinegar
    4 lb. or less sugar
    1 Tbsp. celery seed
    1 Tbsp. mixed pickle spice
    2 Tbsp. salt
    green food coloring
Preparation
    Cut cucumbers in
    1/4-inch
    slices
    and cover with lime and water.
    Let stand
    24 hours; rinse off well and cover with clear water.
    Let
    stand\t4 hours; drain.
    Heat cider vinegar, sugar, celery seed,
    pickle
    spice
    and
    salt, until lukewarm. Pour over pickles.
    Let
    stand
    overnight.
    Next morning bring pickles to a boil
    and boil gently for 35 minutes.
    Count time after boiling starts.
    Add
    food\tcoloring
    while
    boiling for appearance.
    Pack in jars
    while they are hot.
    Cover with hot vinegar to seal.
