Minestra Soup - cooking recipe

Ingredients
    2 Tbsp. oil
    2 carrots, sliced
    1 onion, sliced
    2 stalks celery, sliced
    about 6 c. water
    1 bay leaf
    salt and pepper
    1/2 small cauliflower, divided into flowerets
    2 small potatoes, diced
    1 clove garlic, crushed
    1 Tbsp. chopped parsley
    grated Parmesan cheese
Preparation
    In a kettle, heat oil.
    Add carrots, onion and celery and fry until just beginning to brown, stirring occasionally.
    Pour in water and add bay leaf.
    Season lightly.
    Cover and simmer for 15 to 20 minutes.
    Add potatoes and cauliflower.
    Cook for 20 minutes longer or until potatoes are almost tender.
    Add the garlic and parsley and simmer 10 more minutes.
    Remove bay leaf and taste for seasoning.
    Sprinkle on Parmesan cheese just before eating.
