Spanish Rice Casserole - cooking recipe

Ingredients
    1 c. uncooked rice
    2 c. tomato puree
    2 pimentos
    1 small yellow onion
    2 tsp. oleo
    3 c. water
    2 tsp. salt
    1/2 c. grated cheese
Preparation
    Wash rice, add to puree and water.
    Cut the pimento and onion into pieces and with the salt and oleo, add to rice, puree and water.
    Boil together for 5 minutes.
    Place in casserole and bake 1 hour at 400\u00b0.
    Sprinkle cheese over top and brown.
