Yellow Squash Relish - cooking recipe

Ingredients
    12 c. grated yellow squash
    4 c. chopped onions or 1 c. minced onion, soaked in water
    2 red peppers, chopped
    2 green peppers, chopped
    5 Tbsp. salt
    2 c. vinegar
    2 tsp. pickling spice
    1 tsp. celery seed
    6 c. sugar
Preparation
    In a very large bowl, mix first four ingredients (squash, onions and peppers) well and sprinkle with the salt.
    Let stand overnight.
    Drain and wash with cold water in a colander.
    After washing, boil together the vinegar, pickling spice and celery seed.
    (Tie spice and celery seed in a clean white cloth.)
    Strain and add sugar.
    Stir until sugar is dissolved.
    Put in squash mixture and boil to a good hard boil.
    Pack in pint jars and seal. Yields 6 pints.
