Cranberry Nut Bread - cooking recipe
Ingredients

2 c. sifted flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 egg or 2 egg whites
1/4 c. oil
3/4 c. orange juice
rind of 1/2 orange
1 c. sugar
1 c. cranberries
1 c. chopped pecans
Preparation

Preheat oven
to 350\u00b0.
Oil
a
9 x 5 x 3-inch loaf pan. Sift flour,
baking
powder, salt and baking soda into a mixing bowl and set aside.
Put egg, oil, orange juice, rind and sugar into blender container.
Cover
and
process at mix speed until rind is finely grated.
Stop blender and add into flour mixture and
mix by hand only
until
flour
is
moistened.
Pour
into prepared pan and bake 50 to 60 minutes or until cake is done.
