Atkelt Alecha - cooking recipe

Ingredients
    2 c. peeled and sliced carrots
    1/4 lb. string beans, ends cut and broken in halves
    1/2 lb. potatoes, peeled and cubed
    1/4 c. vegetable oil
    1/3 c. sliced Spanish onion
    1/4 tsp. cardamon
    1 tsp. grated ginger root
    1 tsp. minced garlic
    salt
Preparation
    Boil carrots, string beans and potatoes separately in enough water to cover each.
    Boil carrots and potatoes about 15 minutes, beans about 10 minutes.
    In Dutch oven, heat oil.
    Saute onion until brown.
    Add cardamon, ginger, garlic and salt to taste; stir well to blend.
    Add vegetables.
    Let simmer about 3 minutes. Makes 4 to 6 servings.
