Scottish Shortbread - cooking recipe
Ingredients

1/2 lb. butter (no substitution)
3 c. all-purpose flour
1/2 c. sugar
Preparation

Put soft (not melted) butter, flour and sugar into bowl.
Cut butter into mixture.
Knead with knuckles and fingertips until dough becomes round and soft and no crumbs remain.
If crumbs remain or it looks dry, it has not been kneaded enough.
(Don't use electric mixer.)
Place dough in 9 x 13-inch baking pan and flatten out evenly with back of spoon.
(Do not grease pan.)
Prick all over with fork.
Place in preheated 325\u00b0 oven for about 35 minutes. Remove from oven and cut into small squares.
Lightly sprinkle top with fine coat of sugar.
Remove from pan and place on wire cake rack.
Place cookies on rack into oven at 275\u00b0 for about 30 minutes.
(Watch both times, do not overbrown.)
Makes about 50 pieces.
