Veracruz, Chicken And Rice - cooking recipe

Ingredients
    3 c. Minute rice
    1 bell pepper
    1 onion
    1 can Ro-Tel tomatoes
    1 can Cheddar cheese soup
    3 c. water
    salt to taste
    lemon pepper
    4 boneless skinless chicken breasts
Preparation
    In baking dish with cover, put rice, bell pepper and onion, cut into strips.
    Pour Ro-Tel, soup and water over rice.
    Salt to taste.
    Sprinkle chicken with lemon pepper and lay on top of rice. Cover.
    Cook in oven at 300\u00b0 for 2 hours.
    Stir 1/2 way into cooking.
