Crackling Bacon Corn Cakes - cooking recipe

Ingredients
    6 slices bacon, cut into 1/2 pieces
    1/3 c. chopped onions
    1 c. all-purpose flour
    2 Tbsp. chopped chives
    1 tsp. baking powder
    pinch of cayenne pepper
    1 egg, slightly beaten
    8 oz. can whole kernel corn, drained
    1/2 c. shredded Monterey cheese
    maple syrup, warmed
    1 tsp. salt
    2/3 c. milk
    1 tsp. vegetable oil
Preparation
    In a skillet cook bacon and onion over medium heat until bacon is brown.
    Meanwhile combine flour, chives, baking powder, salt and cayenne pepper.
    Stir in milk, egg and oil until moistened.
    Stir in bacon and onion and remaining ingredients, except maple syrup. Heat griddle to 350\u00b0.
    Pour about one-third cup batter on greased griddle, cook until corn cakes are golden brown; 3 to 4 minutes on each side.
    Serve with warm maple syrup.
