The "Best" Potato Salad - cooking recipe

Ingredients
    2 lb. new potatoes
    1 (8 oz.) carton cottage cheese
    1 1/2 tsp. salt
    pepper
    dash of cayenne pepper
    1 c. thinly sliced red onion
    9 Tbsp. mayonnaise
    chives (I use 1 or 2 Tbsp. frozen chives)
Preparation
    Boil potatoes.
    Cool and slice (4 cups).
    Mix mayonnaise, cottage cheese and chives with seasonings.
    Layer potatoes, onions and mayonnaise mixture again and again.
    Refrigerate 12 to 24 hours.
    Toss before serving.
    Be sure to cover well before refrigerating.
