Cherry Compote(Freezable) - cooking recipe

Ingredients
    2 lb. fresh cherries, stoned
    1 large orange
    5 Tbsp. honey
    1/2 tsp. ground cinnamon
    6 Tbsp. water or red wine
    2 oz. pistachios, shelled
    whipping cream, vanilla ice cream or lemon sorbet (to serve)
Preparation
    Place cherries in pan.
    Wash orange and grate rind into pan. Squeeze juice and stir into cherries.
    Add honey and cinnamon, then add water (or wine); bring to boil.
    Reduce heat, cover and simmer for 10 minutes until tender.
    Remove from heat.
    Cool. Freeze in rigid container.
    Freezer life:
    3 months.
