Ingredients

1/4 c. oleo
1/2 c. chopped onion
1 c. fresh sliced mushrooms
3 c. sliced yellow squash
3/4 tsp. garlic salt
1/2 tsp. black pepper
4 eggs
3 oz. sliced pepperoni
1 c. grated Cheddar cheese
1/2 c. hot pepper cheese
1/2 c. grated Parmesan cheese
Preparation

Melt oleo in 10-inch nonstick skillet.
Add onion, mushrooms, squash, garlic salt and pepper.
Cook over medium heat 15 to 20 minutes.
Whip eggs; pour over squash mixture and cook over medium heat until eggs are set.
Do not stir.
Layer pepperoni, Cheddar cheese, hot cheese and Parmesan cheese.
Cook about 5 minutes until cheeses are melted.
Serve at once.
Sausage or ground beef may be substituted for pepperoni.
