Ingredients
-
3 pt. white sugar
1 pt. whole milk or cream
1/4 lb. butter or margarine
1/4 tsp. soda
1 tsp. vanilla
1 lb. pecan meats, broken
Preparation
-
Pour 1 pint of sugar into a heavy iron skillet and place it over a low fire.
Begin stirring with a wooden spoon and keep the sugar moving so that it will not scorch at all.
It will take almost 30 minutes to completely melt the sugar, and at no time let it smoke or cook so fast that it turns dark.
It should be about the color of light brown sugar syrup.
As soon as you have the sugar started to heat in the skillet, pour the remaining 2 pints of sugar and the cream or milk into a deep, heavy kettle.
Set it over low heat to cook along slowly while you are melting the sugar in the skillet.
