Chocolate Pudding - cooking recipe

Ingredients
    2 egg whites
    2/3 c. unsweetened cocoa powder
    2 Tbsp. cornstarch
    2 1/4 c. skim milk, divided
    1/2 c. granulated sugar
    1/8 tsp. salt
    1 tsp. vanilla extract
    unsweetened cocoa powder (for garnish)
Preparation
    Beat egg whites in small bowl.
    In a large bowl, mix 2/3 cup cocoa and cornstarch.
    Put 3/4 cup milk into cocoa mixture.
    In
    a large heavy saucepan, bring to boil on high heat, whisking constantly.
    Remove pan from heat.
    Mix cocoa mixture into hot milk mixture.
    Boil on medium-high heat. Boil 2 minutes.
    Remove pan from heat.
    Whisk 1 cup hot cocoa mixture into egg whites. Pour mixture into pan.
    Cook on medium-low heat 2 minutes. Do not boil. Remove pan from heat. Add vanilla. Blend well.
    Pour pudding into serving dishes. Cool to room temperature. Cover and chill 1 hour. Garnish with cocoa.
