Spiced Chicken Wings - cooking recipe

Ingredients
    1 large pkg. chicken wings
    3 Tbsp. dry sherry or Shao Hsing wine
    1 c. water
    2 whole star anise
    2 small sticks cinnamon
    2 Tbsp. tamari
    2 Tbsp. sugar
    salt to taste
Preparation
    Place wings in an ungreased wok; add wine.
    Cook until almost all of the wine has evaporated.
    Add water, cover and cook over medium-high heat for 10 minutes.
    Add the star anise and cinnamon and cook, covered, about 5 minutes.
    Then add the tamari, sugar and salt.
    Cover and simmer for 30 minutes.
    Stir often so they don't dry out.
    You may need to add some (3 to 4 tablespoons) water.
    Average cooking time is 45 minutes.
