Hearty Stuffed Peppers - cooking recipe

Ingredients
    8 medium size green peppers (about 4 lb.)
    1 lb. bulk pork sausage
    1 1/2 c. chopped onion
    1/2 lb. fresh mushrooms, chopped
    1 (6 oz.) pkg. herb seasoned stuffing mix
    1 (8 oz.) carton commercial sour cream
    2 c. chopped fresh tomato
    1 (10 3/4 oz.) can tomato soup
    3/4 c. water
    2 tsp. salt-free herb and spice blend
Preparation
    Cut off tops of green peppers; remove seeds.
    Wash peppers; set aside.
    Crumble sausage into a 2 1/2-quart casserole.
    Add chopped onion and mushrooms; stir well.
    Cover tightly with heavy-duty plastic wrap; fold back a small edge of wrap to allow steam to escape.
