Country Captain Chicken - cooking recipe
Ingredients

1 (No. 2) can tomatoes
1 1/2 c. cooked green peas
1 can mushrooms
1/2 c. diced celery
1/2 c. chopped onion
1 clove garlic, minced
1/4 tsp. thyme
1 tsp. curry powder
1 chicken
1 tsp. salt
2 c. rice
1/2 c. toasted almonds
1/2 c. currants
Preparation

Salt, pepper, flour and fry chicken.
Make a brown gravy where chicken was fried.
To this, add all ingredients, except rice, almonds and currants; add the fried chicken.
Let cook slowly with lid on for 30 to 40 minutes.
Cook the rice.
When the chicken is done, pour over rice.
Top with the toasted almonds and currants that have been boiled a few minutes.
This is a really delectable dish.
