Mother'S Fresh Apple Cake - cooking recipe
Ingredients

1 1/2 c. salad oil
2 c. sugar
2 eggs
1 tsp. salt
1 tsp. soda
2 tsp. baking powder
1 tsp. vanilla extract
2 1/2 c. all-purpose flour
1 c. chopped pecans
3 c. chopped raw apples
Preparation

Peel and chop apples and set aside.
Measure oil into large mixing bowl.
Add sugar and eggs.
Beat until creamy with an electric mixer.
Sift flour, then measure.
Sift again with salt, soda and baking powder.
Add a small amount of flour mixture at a time to creamed mixture.
Beat well after each addition.
Fold in pecans and chopped apples.
Spread evenly in a 9 x 13-inch pan which has been lined with waxed paper.
Bake at 350\u00b0
for 55 to 60 minutes.
Turn out on rack to cool.
Cut in squares.
Serve with Cool Whip.
