Turnip Souffle - cooking recipe

Ingredients
    6 medium turnips
    2 Tbsp. butter
    2 eggs
    salt and pepper to taste
    1/2 c. grated Parmesan cheese
    1/2 c. milk
Preparation
    Steam turnips in a small amount of water until tender.
    Drain and mash.
    Add butter, cheese, milk and well-beaten egg yolks. Season to taste and mix thoroughly.
    Fold in stiffly beaten egg whites.
    Pile lightly into a well-oiled baking dish.
    Bake in a 375\u00b0 oven until inserted knife comes out clean (about 35 to 40 minutes).
