Cauliflower Soup - cooking recipe

Ingredients
    1 medium onion, chopped
    2 Tbsp. oleo or canola oil
    2 Tbsp. flour
    2 c. chicken broth
    1 medium head cooked cauliflower
    2 c. milk
    2 c. grated Cheddar cheese
    3 Tbsp. dry sherry
    1 Tbsp. chopped chives
Preparation
    In a large saucepan, heat onion in oil until opaque. Add flour.
    Cook 2 minutes. Slowly pour in broth. Cook, stirring until thickened.
    Add cauliflower. Simmer 2 minutes. Stir in milk and cheese.
    Heat until cheese melts.
    Stir in sherry. Garnish with chives.
