Ingredients

2 1/2 c. sifted plain flour
4 tsp. baking powder
1 c. shortening
2 c. sugar
5 eggs
1 1/4 c. buttermilk
1 tsp. coconut extract
Preparation

Sift together flour and baking powder.
Cream shortening; gradually add sugar, creaming until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add sifted dry ingredients alternately with buttermilk, add extract.
Pour into three greased and floured 9-inch pans.
Bake at 350\u00b0 for 25 to 35 minutes.
Remove from oven; place on cake racks and let cool in pans.
