Doughnuts - cooking recipe

Ingredients
    1 qt. scalded milk
    2 c. plain mashed potatoes
    1 c. white sugar (scant)
    1 c. lard
    1/2 c. lukewarm water
    1 Tbsp. sugar
    2 cakes yeast
    3 or 4 c. flour
    2 beaten eggs
    2 Tbsp. salt
    8 c. flour or a little more
Preparation
    Let the first 4 ingredients cool.
    Add the next 3 ingredients to first cooled mixture.
    When yeast is dissolved, add 3 or 4 cups flour.
    Cover; set aside 1/2 hour.
    Add remaining ingredients.
    Let rise until double in size.
    Cut out; let rise again.
    Fry in hot lard.
