Tex-Mex Muffins - cooking recipe

Ingredients
    1 c. plus 2 Tbsp. all-purpose flour
    4 1/2 oz. uncooked yellow cornmeal
    2 Tbsp. each granulated sugar and double-acting baking powder
    5 oz. cooked turkey sausage
    3 oz. reduced-fat Cheddar cheese, shredded
    1 c. low-fat buttermilk
    1/2 c. drained salsa
    1/3 c. less 1 tsp. vegetable oil
    3 eggs, beaten
    1/4 c. light sour cream
Preparation
    Preheat oven to 400\u00b0.
    Spray 12 (2 1/2-inch) muffin pans with nonstick spray.
    In a large mixing bowl, combine flour, cornmeal, sugar and baking powder. Stir to combine.
    Add scrambled sausage and cheese.
    Stir thoroughly.
