Cheese Souffle - cooking recipe
Ingredients

1/4 c. margarine
1/4 c. flour
1/2 tsp. salt
1/4 tsp. dry mustard
dash of red cayenne pepper
1 c. milk
1/2 c. shredded Cheddar (4 oz.)
3 eggs, separated
1/4 tsp. cream of tartar
Preparation

Heat oven to 350\u00b0.
Butter a 4-cup souffle dish or 1-quart casserole.
Melt margarine in small saucepan over low heat. Blend in flour, salt, mustard and pepper.
Cook over low heat, stirring constantly, until smooth and bubbly.
Remove from heat. Stir in milk; heat to boiling, stirring constantly.
Boil and stir 1 minute.
