Lupe'S Super Enchiladas - cooking recipe
Ingredients

1 onion, diced
1 1/2 to 2 lb. ground beef
cooking oil
2 c. water
2 Tbsp. chili powder
2 Tbsp. flour
1 (16 oz.) can tomato sauce
salt and pepper to taste
10 to 12 corn tortillas (preferably red)
1 lb. Cheddar cheese, grated
grated onion (optional)
Preparation

Brown onions and beef in oil and set aside.
Combine water and chili powder and set aside.
Heat 3 tablespoons oil and add flour, stirring until browned.
Slowly add chili powder mixture, stirring until thickened.
Add tomato sauce, salt and pepper and simmer about 5 minutes.
Soften tortillas by dipping in enough hot oil to cover, quickly remove and drain (very hot, use tongs!).
Place some of the meat in each tortilla and top with cheese and roll. Place seam side down in baking dish.
Cover with tomato sauce, any remaining meat, cheese and grated onion.
Bake at 350\u00b0 for 30 minutes.
