Honey Beet Pickles - cooking recipe

Ingredients
    2 c. honey
    1 c. vinegar
    2 cinnamon sticks
    6 whole cloves
    fresh beets, whole or sliced
Preparation
    Fill jars with beets to within inch of jar rim.
    Heat honey, vinegar, cinnamon and cloves to boiling.
    Pour over beets to one-half inch of top.
    Place lids on; put in water bath.
    Process about one hour.
    Yields enough juice for 5 pints of packed beets.
