Ingredients

2 c. sifted cake flour
1 1/3 c. granulated sugar
4 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1/2 tsp. lemon flavoring
1 tsp. vanilla
1 c. milk
4 egg yolks, unbeaten
Preparation

Sift first four ingredients into mixing bowl.
Drop in shortening.
Add flavoring, 2/3 of milk.
Beat 2 minutes or 300 strokes.
Scrape bowl and spoon often, add rest of milk and egg yolks and beat 2 minutes longer.
Pour into 2 (8-inch) pans 1 1/2 inches deep which have been lined on bottom with wax paper.
Bake in oven at 375\u00b0 for 30 minutes.
Cool on wire rack 10 to 15 minutes before removing from pan and removing paper.
Frost with 7 Minute Frosting and cover top and sides with coconut.
