Salmon Hash - cooking recipe

Ingredients
    1 medium Russet potato, peeled and sliced
    3 Tbsp. unsalted butter
    2 Tbsp. safflower oil
    1 large clove garlic, minced
    1/2 c. minced onion
    1/3 c. finely chopped celery
    2 Tbsp. chopped pimiento
    2 Tbsp. diced green pepper
    6 Tbsp. heavy cream
    1/2 tsp. salt
    1/4 tsp. ground white pepper
    1/4 c. minced fresh parsley
    1 1/2 c. cooked, flaked salmon (10 oz.)
Preparation
    Cook sliced potato in boiling water, 5 to 6 minutes, until tender.
    Drain, rinse under cold water and pat dry.
    Dice cooked potato slices.
