Creole Pork Chops - cooking recipe

Ingredients
    4 boneless pork chops
    vegetable cooking spray or oil
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/2 c. chopped green pepper
    1/2 c. chopped sweet red pepper
    1 clove garlic, chopped
    1 can tomatoes (whole), liquid drained and chopped
    1/2 tsp. hot sauce
    2 c. cooked rice
    1 tsp. cornstarch
    1/4 c. chicken broth
Preparation
    Brown chops and remove.
    Add onion and the next 4 ingredients and saute.
    Remove 1/2 of these vegetables; set aside.
    Add tomatoes, hot sauce and pepper to remaining vegetables in pan. Combine cornstarch in 1 tablespoon water.
    Add to vegetables. Cover; cook for 1 minute on medium heat.
    Stir and mix.
    Put chops in pan; cover and cook 15 minutes.
    Stir other half vegetables in rice.
    Serve chops over rice.
