Zucchini Skillet Supper - cooking recipe

Ingredients
    4 c. zucchini, thinly sliced
    1 c. sliced onion
    2 c. canned tomatoes (with juice)
    3/4 c. drained, canned mushrooms
    salt, pepper and oregano to taste
    cooked chicken cubes or cooked lean ground beef or turkey
Preparation
    Saute the zucchini and onion in small amount of oil. Add the tomatoes with juice, mushrooms, salt, pepper and oregano to taste, and chicken or ground beef or turkey.
    Simmer just until heated through.
    Serve in soup bowls and sprinkle with Parmesan cheese. Serves 4 to 5.
