Yu Shan Eggplant - cooking recipe

Ingredients
    1 lb. eggplant, cut into 1/2 x 3/4 x 2-inch slices
    1 1/2 Tbsp. chopped scallions
    1 1/2 Tbsp. chopped garlic
    1 1/2 Tbsp. chopped ginger
    1/2 Tbsp. hot bean paste
    3/4 to 1 1/2 lb. lean pork
    1 tsp. salt
    1 tsp. sugar
    pinch of ground white pepper
    1 1/2 Tbsp. rice wine vinegar
    1 Tbsp. soy sauce
    1/2 c. broth
    1 1/2 Tbsp. cornstarch
    1 1/2 Tbsp. water
Preparation
    Steam eggplant slices until tender (50 minutes in a steamer or 8 minutes in microwave). Chop and measure other ingredients and set aside.
