Cream Of Broccoli Soup - cooking recipe

Ingredients
    2 lb. fresh broccoli
    3 Tbsp. butter
    1/2 c. chopped onion
    2 Tbsp. flour
    1 qt. whole milk
    1 1/2 c. grated Cheddar cheese
    1/4 tsp. salt
Preparation
    Trim leaves from broccoli.
    Split stems and soak in cold salted water for 1 hour.
    Drain.
    Reserve 8 florets for garnish. Steam broccoli until tender; reserve liquid.
    Process broccoli in food processor.
    Set aside.
    Saute onions in butter until tender; whisk in flour.
    Gradually whisk in milk, one cup at a time. Whisk in pureed broccoli.
    When hot, add cheese and whisk until melted.
    Add broccoli cooking water to thin as desired.
    Add salt. Garnish with florets.
    Makes 6 to 8 servings.
