Watermelon Pickle - cooking recipe

Ingredients
    10 lb. watermelon rind
    1 qt. white vinegar
    10 lb. sugar
    3/4 tsp. oil of cloves
    3/4 tsp. oil of cinnamon
Preparation
    Peel and slice rind in small pieces.
    Cover with cold water. Let stand in cool place for 24 hours.
    Rinse thoroughly, then drain well.
    Cover with cold water and bring to a boil.
    Simmer for 10 minutes, then drain.
    Rinse thoroughly, then drain completely. Bring vinegar, sugar and oils to a boil, stirring until sugar is dissolved; pour over rind in large kettle.
    Stir well until all rind is covered.
    Let stand for 24 hours.
    Boil for 7 to 10 minutes or until rind is tender.
    Pour into crock; stir each day for 5 days.
    Return to kettle; bring to a boil.
    Remove from heat and seal in hot sterilized jars.
