Kidney Bean Casserole - cooking recipe

Ingredients
    1/8 c. green pepper
    1/4 c. chopped onion
    1/8 c. chopped celery
    1 large clove garlic, minced
    1/2 can kidney beans, drained and rinsed
    1/2 c. peeled and chopped tomato
    1/8 c. water
    1/4 tsp. chili powder
    1/8 tsp. pepper
    dash of Tabasco sauce
    1 c. hot cooked rice
    1/8 c. shredded 40% less fat sharp cheese
Preparation
    Coat a large nonstick skillet with cooking spray.
    Place over medium-high heat until hot.
    Add onion and next 3 ingredients. Saute until tender.
    Stir in beans and next 5 ingredients. Cover and cook 8 to 10 minutes, stirring often.
    Place hot rice in 1-quart casserole. Spoon bean mixture over rice. Sprinkle with cheese.
    Cover and let stand 5 minutes.
    Makes 3 servings.
