Sweet And Sour Pork - cooking recipe

Ingredients
    1 lb. boneless pork, cut into 3/4-inch pieces
    2 Tbsp. oil
    1 c. water
    1/2 tsp. salt
    8 1/4 oz. can pineapple chunks, drained
    1 c. water chestnuts, sliced thin
    3/4 c. thin diagonally cut carrot slices
    1/2 c. apricot preserves
    2 Tbsp. cider vinegar
    2 Tbsp. cornstarch
    2 Tbsp. soy sauce
    1 large green pepper, cut into strips
    hot cooked rice
Preparation
    Brown meat in oil in large skillet or wok.
    Add water and salt; bring to boil.
    Reduce heat.
    Cover; simmer 30 minutes, stirring occasionally.
    Add pineapple and vegetables; bring to boil.
    Reduce heat.
    Cover; simmer 5 minutes.
    Stir in apricot preserves, vinegar, cornstarch and soy sauce.
    Cook, stirring constantly, until clear and thickened.
    Serve over rice.
