Avocado Vegetable Mix Salad - cooking recipe
Ingredients

2 (12 oz.) cans whole kernel corn, drained and chilled
2 medium avocados, peeled and diced
6 hard-cooked eggs, diced and chilled
1 c. mayo or salad dressing
1 Tbsp. lemon juice
2 Tbsp. chopped onion
1/2 tsp. chili powder
1/4 tsp. ground cumin
1/8 tsp. ground nutmeg
Preparation

Combine corn, avocados, eggs and onion.
Blend together remaining ingredients.
Toss mayonnaise mixture lightly with avocado mixture.
Garnish with sliced, pitted ripe olives, if desired.
