Oat Bran Muffins(Low-Fat) - cooking recipe
Ingredients

1 c. boiling water
1 c. raisins
1 c. brown sugar, packed or 1 1/2 c. honey
3 1/4 c. whole wheat flour
2 c. oat bran
1 Tbsp. baking soda
2 c. buttermilk
1/2 c. applesauce
4 Egg Beaters (1 small box) or 4 egg whites
1 c. drained, crushed pineapple or whole can
Preparation

Pour boiling water over raisins.
Add all other ingredients and mix.
Do not overmix, just enough to moisten well.
Bake at 375\u00b0 for 20 minutes in muffin pans sprayed with Pam.
This batter can be stored in refrigerator and baked as needed.
It will last for 2 to 3 weeks.
Muffins freeze well also.
Will make 36 large muffins.
