Crab Croquettes - cooking recipe

Ingredients
    1/3 c. chopped mild onion
    6 Tbsp. butter or margarine
    1/4 c. flour
    dash of cayenne
    1/2 tsp. Worcestershire sauce
    1/2 tsp. Dijon-style mustard
    1 c. milk
    1 tsp. fresh lemon or lime juice
    1 sprig parsley, chopped
    2 (7 oz.) cans crab meat
    salt
    1 egg, beaten
    2 Tbsp. water
    fine bread crumbs
    lemon wedges
Preparation
    Saute onion in 4 tablespoons butter for 5 minutes.
    Blend in flour and seasonings.
    Add milk and cook until thick, stirring constantly.
    Remove from heat; stir in lemon juice, parsley and crab meat.
    Season to taste with salt.
    Chill.
    Shape into croquettes with hands.
    Dip croquettes into egg, then in crumbs. Fry slowly in remaining butter until browned on both sides.
    Serve piping hot with lemon wedges.
